[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1)(a) / Time/temperature controlled for safety food - hot holding.
Critical TCS foods not being hot held at the proper temperature. Observed philly steaks in hot holding cabinet were holding at 115F. TCS foods for hot holding shall be held at 135F or above Corrective Action: PIC placed the philly steaks in the oven to be reheated

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Repeat TCS foods not being cold held at the proper temperature. Observed foods in salad bar are not being held at 41F or below. Pasta salad holding at 43F, steak and hard boiled eggs holding at 50F. TCS foods for cold holding shall be held at 41F or below. Corrective Action: TCS foods were removed from the salad bar. If ice baths must be used, ensure containers of food are submerged in ice up to the lip of the container.

Non-durable equipment observed. Observed salad bar cooler is unable to hold foods at 41F or below. Ice baths were being used due to cooler not working properly. Repair or replace the salad bar cooler so it is able to hold foods at 41F or below without the use of ice baths.

3717-1-04.1(A) / Equipment and utensils - durability and strength.
Non-durable equipment observed. Observed walk-in cooler shelves are rusty. Replace or reseal shelves so they are smooth and easily cleanable.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Repeat Non-food contact surfaces of equipment are unclean. Observed food debris inside all three of the microwaves in the cafeteria. Clean the microwaves so they are free of food debris.
