Critical Repeat Corrected During Inspection TCS foods not being hot held at the proper temperature. The pretzel dogs in the warming unit were 117-122F. All TCS fod shall be held at 135F or greater to prevent the growth of bacteria. Discard the out of temperature food.

Critical TCS foods not being cold held at the proper temperature. The undercounter cooler is holding hot dogs at 45F. All TCS food shall be held at 41F or less to prevent the growth of bacteria. Adjust the cooler accordingly and suggest reducing the stock inside of it.
