Thoroughly clean and maintain the ice machine. Place the ice machine on a regular cleaning and sanitation schedule to prevent build up and cross contamination of ice. To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch.

Observed a few cracked and damaged food container lids in use..
All food containers and lids must be in good condition at all times. Remove the damaged lids from service and provide new NSF approved ones for use. Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.
