Critical Repeat Corrected During Inspection Observed food that was not properly protected from contamination by separation, packaging, and segregation. Observed raw cartoned eggs in refrigerated storage above milks, beverage. See Below
To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule. Eggs are cooked out to 165 F while other foods are not. Proper storage order prevents cross over contamination events.

The physical facilities are not being maintained in good repair. Observed ceiling leak at HVAC where drops hit floor (inbetween prep table and griddle. Do not have cross contaminations.

Measured 7.6 F for kitchen two door (beef slices, philly meats, seafoods, potatoes and Tilapia. Kitchen 2 door 'frozen' at -4 F for catfish, soft cheeses. Measured 33 F for kitchen 2 door (meats). PrepTable top/bottom at 37 F to 38 F for cut lettuce, corned beef, beef. Kitchen's deli case at 36 F for tuna fish, cut meats, cheeses. Measured -9.2 F for Nestle coffin chest (raw chicken for kitchen) Tools are present and in use. Measured 100 ppm chlorine. Consulted on 2 inch air gap at mop sink. |
