Critical Corrected During Inspection Quaternary ammonium sanitizing solution tested at 0ppm in all sanitizer buckets and below 150 ppm in 3-bay sink. Sanitizer was remade and then tested at 300 ppm.

3717-1-03.4(F)(1)(a) / Time/temperature controlled for safety food - hot holding.
Critical Corrected During Inspection TCS foods (pork 125F, beef 130F) not being hot held at the proper temperature in steam well. Steam well was not turned on. TCS foods were reheated during inspection and warmer was turned on.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods (corn 60F, salsa 59F, cheese 58F) not being cold held at the proper temperature in back prep top cooler. Cooler was not turned on before TCS foods were placed in cooler. Cooler temperature readout was 58F. TCS foods were discarded during inspection.

Critical Corrected During Inspection Improper use of time as a public health control (4 hours). Observed steak not time stamped at time of inspection. Steak was timed during inspection.
