Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed multiple containers of food in coolers without lids. All food shall be covered to prevent contamination. Corrective Action: PIC put lids on uncovered food

Repeat Facility does not have an employee with manager certification in food protection.

Working food containers not properly labeled. Observed containers containing spices are not labeled. Label all containers of spices/ingredients with the common name of the contents.

Re-use of single-service or single-use articles. Observed single-use containers being re-used for food storage. Single-use plastic containers are not meant to be washed and re-used, and must be discarded once they are emptied of their original contents.

Non-food contact surfaces of equipment are unclean. Observed food debris and build-up in the bottom of the chest freezer containing fish. Clean the chest freezer so it is free of build-up and debris.
