[?] A summary of the violations found during the inspection are listed below.

3717-1-04.1(C) / Food-contact surfaces - cleanability
Critical Food contact surfaces were not easily cleanable- observed cardboard being used to line the shelf in the walk-in cooler. This material is not acceptable because it is absorbant and not easily cleanable. Use a material that is non abosorbant, smooth, and easily cleanable. For example - plexi glass or stainless steel.
Multiuse food-contact surfaces shall be smooth and accessible for cleaning and inspection without being disassembled, by disassembling without the use of tools, or by easy disassembling with the use of handheld tools.

3717-1-06.2(B) / Handwashing cleanser - availability.
Critical Observed no supply of hand cleaning liquid, powder or bar soap at the handwashing sink in the back kitchen area..
Each handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap.

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Observed improper storage of food items. Observed boxes of food being stored directly on the floor of the walk-in cooler.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor.
3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Equipment and/or components are not maintained in good working order. Observed cracked green lid. Remove from use and replace. Once items are damaged they are not longer considered easily cleanable and bacteria can become trapped in the cracks.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.
3717-1-04.4(Q) / Utensils, temperature and pressure measuring devices - good repair and calibration.
Utensils, thermometers, and/or pressure guages were not kept in good repair or calibration. Observed badly damaged ice scoop. Remove from use and replace with a new scoop.
(1) Utensils shall be maintained in a state of good repair or shall be discarded;
3717-1-04.8(E) / Equipment, utensils, linens, single-service articles, and single-use articles - storage.
Cleaned equipment and utensils, laundered linens, or single-service and single-use articles are not properly stored. Observed cups and straws stored next to the drive through hand-washing sink where they could be exposed to splash. Re-locate these items or install a splash guard.
Cleaned equipment and utensils, laundered linens, single-service articles, and single-use articles shall be properly stored as described in this rule.

Hang wet mops up to dry on the hooks provided.
Provide a colander for the washing of lemons - washing of lemons must be done in the sanitizer bay of the sinks when dishes are not being done OR install a designated food prep sink.
