Critical Food not properly protected from contamination by separation, packaging, and segregation. Observed raw chicken stored above pork loin. Corrective Action: Arranging each type of food in equipment so that cross contamination of one type with another is prevented.

Critical Equipment food-contact surfaces or utensils are unclean. Observed build-up of pink slime inside the ice machine chute. Corrective Action: Machine shut down for cleaning.

Critical TCS foods not being hot held at the proper temperature. Observed Pizza at 110F and bratwurst at 110F. Observed mixed vegetables held at 127F. Corrective Action: Food was reheated to 165F for 20 seconds.

Observed pizza displayed on a buffet not properly protected with a sneeze guard to prevent contamination by consumers. Corrective Action: Food display shall be protected by a sneeze guard to prevent contamination by consumers.
