Food Establishment and Restaurant Reports

Public Health Sanitarians inspect all retail food establishments countywide, excluding the jurisdictions of De Pere Health Department and Oneida Nation Health Department. Food facility operators are required to meet the applicable regulations in the Wisconsin Food Code. These facilities are regularly inspected and also under special circumstances.

Food inspection reports are available online for each Brown County licensed facility. The inspection report should be considered a “snapshot in time” and represents conditions present while the Sanitarian was onsite conducting an inspection of the facility. The Sanitarian’s observations correlate with the Wisconsin Food Code.

How to read an Inspection Report:

An inspection report will indicate if there are priority, priority foundation, and/or core violations. Each of these violation types are associated with varying levels of risk and require different timelines for correction. Additional information can be found in the Wisconsin Food Code and ATCP 75.

Priority Violation:

  • Highest risk
  • Operator has 3 days to correct
  • Examples include violations related to cooking, reheating, cooling, and handwashing.

Priority Foundation Violation:

  • Medium risk
  • Operator has 10 days to correct
  • Examples include violations related to equipment or procedures surrounding personnel training, infrastructure, necessary equipment, hazard analysis critical control point (HACCP) plan, documentation, record keeping, and labeling.

Core Violation:

  • Lowest risk
  • Operator has 90 days to correct
  • Examples include violations related to general sanitation, operational controls, sanitation standard operating procedures, facilities or structures, equipment design, and general maintenance.
