Structural changes were made to prevent the entry of rodents into the facility.
The most recent pest control report was reviewed. They are coming onsite three times per week.
A new dishwasher was installed and it reached 74 C at the plate level (71 C is the minimum temperature)

Outstanding items:

Install a working thermometer in the chicken hot holding case (the current thermometer is an oven thermometer)
Record the chicken cook temperatures.
