Routine check.
Manager on site has an equivalent to Food Safe Certificate.
Coolers - all at 4C/40F or colder.
Freezers - satisfactory.
Reheating - time /setting pre-programmed.
Temperature records kept.
Hand washing - sinks have hot/cold water, liquid soap, and paper towels in dispensers.
Quats sanitizer - about 240ppm in sani bucket. Test strips available. Make sure this matches the concentration recommended for food contact surfaces without a potable water rinse.
Commercial dishwasher - after 4 runs, temperature inside of machine reached about 160F (satisfactory). Note, the final rinse water gauge reached 188F (not 180F) when the required temperature inside of the machine was reached AND when the wash water reached the required 150F so proper warm up of this machine is required. Records are being kept for final rinse water gauge (sani cycle) temperature (to be at least 188F).
Cleaning and organizing - very good.
Pest control reports from licensed pest control available. Monitoring is being done. Where possible it is recommended to seal gaps where pests may enter.
