Observation (CORRECTED DURING INSPECTION): 0ppm Quats was noted in sanitizer bucket. At first 0ppm Quats was detected from dispensing system. It took about 10 seconds for sanitizer to come out from dispensing system.
Corrective Action(s): Use test strips to test sanitizer concentration.
New bucket is filled at time of visit.

Observation: Rodent droppings, appear to be old, observed in facility. Areas include shelves behind 2-door prep cooler, and on floor between back cooler and freezer. Pest control company comes regularly.
Corrective Action(s): Remove droppings, and sanitize areas.
Continue to monitor.

-->floor under back cooler and freezer
-->under dishwashing sink (where chemicals are stored)

No obvious signs of pests at time of visit
Dishwasher final rinse reaches at least 71oC on plate, as per thermolabel

Foods are stored in an organized manner

Note:
It is noted that some areas (ie. under back cooler/freezer; or under cooking equipment) are not entirely covered with surfaces that are smooth, easily cleaned and impervious to moisture. Since there are sanitation issues in these areas, surfaces should be refinished.
