Observation (CORRECTED DURING INSPECTION): Previously discussed. Too many wiping cloths being noted throughout work/prep areas. Sanitizer buckets too strong.
Corrective Action(s): Limit the amount of cloths being used on site. Store all clothes in a sanitizer at all times. Reduce sanitizer concentration - too strong.

Notes:
- Monitoring of all temperatures is required to be conducted throughout the day.
- Mechanical (High Temp) Dishwasher: ok.
- Ensure all food contact surfaces are cleaned/disinfected after use or on a timely manner. (ie: 3-4 hour intervals.)
- Food Storage: No storage of food items ontop of prep line inserts at room temperature.
- Sanitary Facilities: Handsinks are to be kept free of obstructions at all times.
- Sanitation: Cleaning/degreasing of all work storage areas is to be conducted regularly. Ensure no build up of food debris on any surfaces. (ie: Shelves, etc)
- Pest Control: Maintain an active pest control program within this facility. Increased sanitation is part of an effective pest control program.
