Critical No person in charge present in food facility during inspection. At the time of inspection, no PIC was present in the kitchen to correct violations. Ensure a PIC is present at all times.

Employee eating, drinking, or using tobacco in non-designated area. Observed employee bottle beverage stored in refrigerator above RTE foods. Ensure that employee beverages are kept in designated areas.

3717-1-03.4(H)(1)
Critical Ready-to-eat, TCS food not properly discarded when required. Observed hot dogs and sausages marked "Exp. 3/17". Ensure that TCS foods are discarded when required.

3717-1-03.4(G)
Critical Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed mushrooms, sauce in the cold holding table not date marked. Ensure TCS foods are properly date marked.

Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. Observed no thermometer in the prep table. Ensure that thermometer is provided in cold holding equipment.

Improper use and/or maintenance of wiping cloths. Observed wiping cloth stored on tables. Ensure wiping cloths are stored in sanitizer solution at proper concentration.

3717-1-04.8(E)(1)
[52] Improper storage of single-service and single-use articles. Observed pizza circles stored on the floor, observed single-service container stored uncovered with food debris falling into it. Ensure that single-service and single-use articles are stored such that they are six inches off the floor, and are not susceptible to contamination.

Comments
Received a complaint on 03/18/2024 that kitchen is not date marking, changing gloves, and not hot holding items for the correct amount of time. Upon inspection, there were several violations including: improper date marking, improper storage of single use items, expired sausages. No PIC was present to correct violations.
