Observed cooked bacon and ham in bakery walk-in cooler without date marking. Product must be dated to reflect the same expiration on prep line where product pulled from.
Refrigerated, ready-to-eat, time/temperature controlled for safety food held refrigerated for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day to be consumed, sold, or discarded as required.

Corrected During Inspection Observed employee clean soup bag squeezer and pan with wet sanitizer rag. Equipment must be washed, rinsed, and sanitized every four hours.
Equipment food-contact surfaces and utensils shall be cleaned at a frequency specified in this rule.
