3717-1-06.4(L) Presence of dead pests or insects. Observed a couple dead bugs in dry storage close where empty boxes are stored and in closet to the left of that one. Ensure dead bugs are removed appropriately.

3717-1-04.8(E)(1) Observed slicer and mixer stored with bag for protecting clean equipment over pieces of equipment. Slicer had debris present on it and mixer had brown liquid residue present. Ensure these items are kept clean or removed from operation if no in use.

3717-1-04.2(I) No sanitizer test kit available. Observed sanitizer test kit out of date. Ensure new sanitizer test kit is obtained and used regularly.

3717-1-06.4(B) Facility not maintained clean. Observed some debris and residues under dry good storage shelving in old cafeteria seating area. Ensure facility is maintained clean.

Ensure kitchen manager has obtained Managers Course in Food Protection and has copy of certificate for verification. Recommend cleaning out old/un-needed and un-used items throughout storage areas. Due to the age and nature of the building-recommend getting rid of any of these unnecessary items to minimize and potential pest harborage sites.
