[?] A summary of the violations found during the inspection are listed below.

3717-1-04.5(B)(1) / Equipment food-contact surfaces and utensils - cleaning frequency.
Critical Food equipment surfaces not cleaned at required frequency. Observed equipment not being cleaned and sanitized after use or between uses. The dough hook, mixing bowl, dough sheeter, cheese graeter, and can opener were not being cleaned after use. All food contact surfaces must be cleaned and sanitized after use.

3717-1-03.6(A) / Discarding/reconditioning unsafe, adulterated, or not honestly presented food
Critical Corrected During Inspection Unsafe, adulterated or not honestly presented food not discarded or properly reconditioned. Observed a #10 can that was dented on the rim and not segregated or discarded. Segregate dented cans that are to be held for credit, or discard.

3717-1-06.2(C) / Handwashing sinks - hand drying provision.
Corrected During Inspection No towels or drying device at the handwashing sink(s). Observed paper towels lacking at the the hand sink by the double door cooler. An approved method for drying hands must be available at all handsink at all times.

3717-1-03.2(M) / Wiping cloths - use limitation.
Improper use and/or maintenance of wiping cloths. Observed wiping cloths not being stored in sanitizer between uses. Store wiping cloths in sanitizer between uses to prevent bacterial growth.

3717-1-04.4(B) / Cutting surfaces.
Cutting blocks or boards cannot be effectively cleaned and sanitized. The cutting boards on the prep table coolers are stained and have deep cuts preventing them from being properly sanitized. Either resurface or replace the cutting boards.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Equipment components are not intact, tight or properly adjusted. Observed a torn door gasket on the 2-door freezer. Replace the gasket to ensure proper operation of the freezer.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Repeat Non-food contact surfaces of equipment are unclean. Observed the floors and walls as well as the inside and outside of freezers and coolers,and the conveyor and rollers on pizza oven not being cleaned to sight and touch. Non food contact surfaces should be cleaned at least daily.
