Critical Observed cheese & other TCS foods held at 45 F in reach in cooler. Per code TCS foods must be held at 41 or below. PIC voluntarily discarded container of cheese, blue cheese, cooked corn & lettuce at time of inspection..

3717-1-04.4(J) / Mechanical warewashing equipment - wash solution temperature.
Critical Corrected During Inspection Improper temperature of wash solution in mechanical warewasher. Dishwasher not achieving correct temperature during wash and required maintenance. PIC called in repair at time of inspection.

Observed build up of debris on toaster. Surfaces of equipment need to be maintained in a clean condition.
