At the time of inspection the PIC did not have ingredients for packaged brownies. Retain ingredients labels for foods so that allergens can be indentified at request of customer. (Packaged brownies were NOT for customer self-service exempting them from labeling)

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Observed dough racks and a container of raw sausage on the ground of the walk in cooler. At the time of inspection the raw sausage was moved to the shelf. Store all foods at least 6 inches off of the ground to prevent contamination from splash or spilling.
