Comments
As part of the variance inspection, I reviewed the variance approval letter and written procedure for keeping american cheese at room temperature for up to eight hours. I also inspected the cheese, which is time-stamped to ensure it is not kept longer than eight hours. No violations were observed at time of inspection.
