Observed mop not being dried peroperly. When mop is not in use, mops must be hanging or draped to dry. Make sure mops are hung up to dry.

3717-1-06.2(I)(3) / Lighting - intensity (50 FC)
Observed light out under hood of fryer. Code staes you must have at least 50 footcandles of light in areas food is prepared. Make sure all lights are working and maintained.
