Critical Improper washing of hands and arms. Observed employee not using a paper towel to turn off faucet after washing hands. Employees must avoid recontamination of hands.

Critical Corrected During Inspection White rice improperly acidified to render it non-TCS. Observed acidified rice with a pH of 3.9. Acidified rice must have a pH of 4.1 to 4.3 to render it non TCS. Rice was disgarded and new batch was made with a pH of 4.1.

Non-food contact surface(s) not cleaned at the required frequency. Observed racks in walk in cooler with build up of debris. Clean racks in walk in cooler.
