Critical Repeat Observed a build up of food debris in the microwave.
Observed mold in the ice chutes on the soda fountains.
Clean thoroughly and often to prevent any debris or mold build up.
To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch.
3717-1-04.6(B) / Sanitizing frequency of utensils and food-contact surfaces
Critical Observed that the hot dog tongs, pizza tongs, and their holders were not removed and cleaned every 4 hours. Every surface that touches a TCS food must be properly washed, rinsed, and sanitized at least once every 4 hours to prevent bacterial growth.
To prevent pathogen growth, utensils and food-contact surfaces of equipment shall be sanitized before use and after cleaning.
3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Observed an employee dump ice tea down the hand sink at the island while cleaning the tea urns. Use hand washing sinks for hand washing ONLY to prevent any contamination of the hand sink.
To prevent contamination, a handwashing sink may not be used for purposes other than handwashing.
3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Observed a damaged seal on the walk in/reach in cooler. Repair seals to prevent warm air from entering and damaging the cooler.
Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
3717-1-06.1(C) / Floor and wall junctures - coved, and enclosed or sealed.
Observed damaged cove molding through out the facility. Replace the cove molding to prevent mop water from soakiing into walls and damaging them.
In FSO's or RFE's in which cleaning methods other than water flushing are used for cleaning floors, the floor and wall junctures shall be coved and closed to no larger than one thirty-second inch; where water flush cleaning methods are used, shall be provided with drains and be graded to drain, and the floor and wall junctures shall be coved and sealed.
