[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(C) / Thawing - temperature and time control.
Observed sliced apples being that were thawed but exceed 41F during thawing process. When thawing foods, ensure methods are used such as cold running water or under refrigeration to prevent food from entering danger zone above 41F. some of the thawed apples were observed at 58 to 60F.
TCS food shall be thawed as required in this rule. Correct By: 23-Feb-2017
3717-1-04.1(A) / Equipment and utensils - durability and strength.
Observed multiple stainless steel pans and lids with damaged corners and pieces that can both pose a physical contamination risk to food and possibly a risk of cutting employees hands during process of food from sharp or broken pieces. Discard all damaged pans or lids and replace.
Equipment and utensils shall be designed and constructed to be durable and to retain their characteristic qualities under normal use conditions. Correct By: 23-Feb-2017
3717-1-06.4(A) / Repairing.
Observed some areas of facility that need repaired. Wall next to production table in production room observed corroded, pitted, and chipping paint. Door frame for several walkin coolers have damaged stainless steel or large gaps that can harbor pests. Observed some areas of wall in dry storage room with holes and gaps.
The physical facilities shall be maintained in good repair.

Food prep areas and production areas show signs of frequent cleaning and sanitation. Gloves in use. Thermometers available for use. Hair restraints in use. Food datemarked and labelled. Hot water adequate. Dish tank reaching hot water sanitation temperature. Serving line has been repaired/ fixed as requested on previous inspection. Operation has made a strong effort at correcting past violations.
