[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Repeat Corrected During Inspection Observed that the facility was not datemarking bologna. Facility shall properly date marked ready to eat TCS foods to prevent them from exceeding 7 days. The PIC dated the bologna at the time of inspection.
To prevent foodborne illness, refrigerated, ready-to-eat, TCS food held at a temperature of 41°F or less for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day, that is a maximum of seven days, by which the food shall be consumed, sold, or discarded. The day the food is prepared or opened is day one.

3717-1-03.2(K) / In-use utensils - between-use storage.
Observed that the facility has ice cream scoops and a dipper well set up, however cannot keep the dipper well running due to overflowing the septic system. Recommend facility to rinse ice scoops and store in a clean and dry locations per section 3.2(K)(3) listed below.
During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored as described in this rule.
3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Observed cooler gaskets on the rear 2 door standing cooler were damaged. Replace gaskets to prevent warm air from entering the cooler and causing damage to the foods or equipment.
Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed box fans at the facility with a build up of dust. Clean box fans to prevent dust from blowing around the kitchen. Observed a build up of food debris and ice in the standing freezer. Clean the freezer often to prevent this build up which may damage foods. Maintain foods covered to prevent any debris or ice from falling into open foods.
Nonfood-contact surfaces of equipment shall be kept clean.
