Critical Corrected During Inspection Observed pepperoni & cheese at 60 F. PIC voluntarily discarded cheese at time of inspection.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Observed lasagna prepped yesterday without a date mark. Per code all TCS food to be kept for more than 24 hours shall be date marked. PIC dated product at time of inspection.

3717-1-05.1(C)(1) / Handwashing sink - required water temperature
Handwashing sink water below 100°F. Handwash sink was not producing adequate hot water. Sink should be serviced to allow for hot water to be accessible and for flow to be adequate.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed food debris build up inside reach in cooler. Per code nonfood-contact surfaces shall be maintained clean to sight and touch.
