Observd about 6 filets of fish thawing at room temperature. Discussed with employee having food thawed under cold running water, in the refrigerator , or as part of the cooking process to help prevent temperature violations. Fish still frozen at time of inspection.

Observed employees washing hands, using gloves and thermometers. Observed food stored in manner that helps protect from cross contamination. Food dated. Cold and hot food observed cooked to proper temperature and or/held at proper temperature. Employees appear knowledgeable in general food safety.
