3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Observed raw eggs being stored above cooked chili meat and cheese in walk-in cooler. Food shall be protected from cross contamination by separating raw animal foods during storage from cooked ready-to-eat food. PIC placed eggs below cooked food during inspection.

3717-1-04.4(N)(1) / Manual and mechanical warewashing equipment, chemical sanitization (chlorine) - temp., pH, concentration, and hardness
Critical Corrected During Inspection Warewashing machine was not reading at a high enough concentration of chlorine after each wash. A chemical sanitizer made of chlorine solution in a mechanical operation shall have a minimum temperature based on the concentration and pH listed in the code. PIC corrected concentration during inspection.

3717-1-03.4(I)(1) / Time as a public health control - written procedures
No written procedures for time as a public health control for onion rings which were sitting at room temperature. If time without temperature control is used as the public health control for a working supply of time/temperature controlled for safety food that is displayed or held for sale or service, written procedures shall be prepared in advance, maintained in the food service operation or retail food establishment and made available to the licensor upon request. Food was voluntarily discarded during inspection.

3717-1-04.1(Y) / Temperature measuring devices.
Corrected During Inspection Walk-in cooler did not have working thermometer in it. In a mechanically refrigerated storage unit, the sensor of a temperature measuring device shall be located to measure the air temperature or a simulated product temperature in the warmest part of a mechanically refrigerated unit. PIC replaced broken thermometer with a working thermometer during inspection.

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Corrected During Inspection Observed frozen French fries being stored directly on the ground in the walk-in freezer. Food shall be protected from contamination by storing the food at least six inches above the ground. PIC raised French fries six inches above the ground during the inspection.

3717-1-04.8(A) / Equipment and utensils - air-drying required.
Corrected During Inspection Observed several metal pans stacked on top of each other that were wet. After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food. PIC designated a worker to properly dry pans during inspection.
