3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Observed a carton of milk, an open package of deli bologna, and an open package of deli turkey not date marked. Confirmed that foods are generally not consumed within twenty-four hours. Refrigerated, ready-to-eat, TCS foods shall be clearly marked at the time the original container is opened in a food service operation and if the food is held for more than twenty-four hours to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded. Ensure TCS, RTE foods are date marked if not consumed within 24 hours. PIC date marked all TCS, RTE foods during inspection.

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Corrected During Inspection Observed a bag of potatoes in plastic box sitting directly on the floor. Food shall be protected from contamination by storing the food at least six inches above the floor. Ensure all food is placed on risers or otherwise raised at least six inches above the floor. PIC moved potatoes to a higher location.

3717-1-06.2(I)(3) / Lighting - intensity (50 FC)
Observed a light burnt out in hood in kitchen. Light intensity must be at least fifty foot candles in areas where a food employee is working with food, utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor. Replace light bulb in hood to increase safety.
