At time of inspection, the following violations were observed: -Employee drink stored above food prep area. Please move away from food prep. -Ham and pasta were kept past their date mark. Discarded. Please ensure all TCS foods are disposed of at end of the 7 day date mark -Back door had significant gap at the bottom. Opening is not protected from rodents/insects. Please put a door sweep or similar item at bottom of door to close it off. -Sandwiches were stored in an open box in reach in fridge. Box must have lid or sandwiches must be wrapped to prevent contamination. -Meat and cheese in prep cooler were out of temp at 48f. Voluntarily discarded. -Cutting board needed resurfaced or replaced. Employee discarded and will use stainless surface instead. -Facility floors and walls in need of cleaning. Floors including behind racks and coolers shall be cleaned more frequently to prevent debris build up. -Increase cleaning frequency throughout facility. |
