[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed sushi ingredients ( raw fish) with no date makings. PIC added date marking to the items in question before leaving

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Improper storage of food items.Observed boxes of dry food items being stored directly on the ground. Food needs to be at least six inches off the ground to prevent contamination.

3717-1-04.4(S)(1) / Single-service articles and single-use articles - use limitation.
Re-use of single-service or single-use articles. Observed cans being reused for food storage in the walk in cooler. Cans need to be thrown away and appropriate storage containers need to be used for food storage.

3717-1-04.1(A) / Equipment and utensils - durability and strength.
Observed to go containers being used as scoops in the large flour and sugar containers. Comercial grade scoops need to be used and stored properly instead of the to go containers.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed build up of dirt on the outside of the sugar and flour containers and surrounding areas. Also observed a build up of dirt on handles and doors of sushi prep cooler. Surfaces need cleaned to prevent contamination of food.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean. Observed vent hood having excessive grease build-up. Hood needs to be cleaned.
