3717-1-03.4(I)(1) / Time as a public health control - written procedures
Critical Time as a public health control was being used without the proper written procedures. Discussed this practice and food manager will be sending a policy for HD to review.
If time without temperature control is used for TCS food before cooking, or for ready-to-eat TCS food that is displayed or held for sale or service, written procedures shall maintained in the FSO or RFE and made available to the licensor.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Corrected During Inspection Observed accumulation of soil residue on nonfood-contact surfaces. Inside microwave, knobs of toaster, and between the fryer and grill area had an accumulation of food residue.
Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
3717-1-05.4(N) / Covering receptacles.
Corrected During Inspection Observed waste receptacles that were not covered. Lids were open during inspection.
Receptacles and waste handling units for refuse, recyclables, or returnables shall be: kept covered inside the FSO or RFE if they contain food residue and are not in continuous use, and after they are filled; or with tight-fitting lids or doors if kept outside.
