Critical Corrected During Inspection HACCP plan did not indicate the new maximum value which went into effection March 1, 2019. All pH values recorded were below the new max of 4.3 - and owner corrected the HACCP plan by crossing out 4.6 and writing in 4.3. Recommend retyping the plan up with this correction. Corrected.
