3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Raw pork and eggs stored above ready to eat food in prep cooler. Store all raw food and meats below or separate from ready to eat food to protect from contamination.
To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule.

3717-1-03.5(A) / Standards of identity
Repeat Consumer self service donuts do not have ingredients book. Obtain ingredient books so customers can see ingredients. make sure food allergens are identified on sandwich labels suach as milk, eggs, soy, wheat, tree nuts, peanuts, fish, shellfish.
Packaged food shall comply with standard of identity requirements in 21 C.F.R. 131-169 and 9 C.F.R. 319, and the general requirements in 21 C.F.R. 130.
3717-1-04.2(I) / Sanitizing solutions - testing devices.
Test strips were water damaged. Obtain new strips so sanitizer concentration can be monitored.
To ensure proper sanitization, a test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided.

Submit updated menu
Complete person in charge training for owners and shift managers
Get updated certificate of occupancy from building dept.
Operation does not need extensive upgrades for ownership change unless identified under the plan review.
