Repeat Observed a build-up of dirt and debris. Hard to reach areas need more frequent cleaning. Hoods and vents above fryers/grill; sink in beverage window, behind and under drink machines.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.

Overall clean and organized. PIC knowledgeable on safe food handling procedures. More detailed cleaning is necessary throughout the FSO (hard to reach areas). Thermometers, test strips, and gloves in use. Hot water adequate. Thank you! |
