VI / Time/Temperature Controlled Safety Food
Observed cooked sweet potatoes coooling at ambient air temperature at 115 degrees. After cooking potatoes are considered a potentially hazardous food and need to be cooled properly with approved methinds. PIC corrected during inspection by placing potatoes on rack and put in cooler. This will prevent growth of bacteria that could cause illness.
