[?] A summary of the violations found during the inspection are listed below.

3717-1-04.1(C) / Food-contact surfaces - cleanability
Critical Corrected During Inspection Observed tongs for use with the hot hold items that had deteriorated and cracked. Tongs were thrown out during the inspection and replaced with a new pair. Food contact utensils and equipment must be kept in a smooth, easily cleanble condition.

3717-1-05.1(D) / Backflow prevention - air gap.
Critical Observed that there was no air gap on the drain line from the ice bin on the pop machine to the sewage drain. There shall be an air gap of at least one inch from the bottom of the drain line to the top of the pipe rim to prevent any contamination from possible sewage back ups and bacterial growth.

3717-1-04.1(Y) / Temperature measuring devices.
Observed multiple coolers without a thermometer in them for measuring ambient air temp. A thermometer shall be placed in the warmest part of each unit to ensure appropriate temperatures are held.

3717-1-06.1(M) / Outer openings - protected.
Repeat Observed an opening along the bottom of the back door of the facility. The outer openings of the facility must be protected to prevent entrance of pests to the food operation.

3717-1-04.4(B) / Cutting surfaces.
Observed cutting board on prep table to be deeply scored and stained. The cutting board shall be resurfaced or discarded since it can no longer be effectively cleaned and sanitized.

3717-1-04(I) / Nonfood-contact surfaces - materials.
Observed wooden shelf around ice cream prep area. Wood shall be stained or painted to make it waterproof. All surfaces in the kitchen shall be constructed to be smooth, easily cleanable, and non absorbent.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed areas with accumulation of debris throughout the facility such as shelves, door handles to coolers and ice cream freezer, and floors underneath grill line. The facility shall be cleaned as often as necessary to prevent accumulation of debris. Also observed ice build up in chest freezer in back of facility. Ice shall be scraped off or defrosted to protect the food from damage.

3717-1-06.3 (C)(1) / Employee accommodations - designated areas
Observed cut fruit in a container in the reach in cooler that the owner said was for employee use. Employee items must be kept in a designated area away from or under food for sale to prevent contamination.
