3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Observed raw meat stored above dressings and orther ready to eat foods. Keep raw meats and eggs stored on bottom shelfs/below ready to eat foods to prevent cross contamination.
To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Observed accumulation of debris inside ice cream cooler, shelves of coolers, and other hard to reach areas of equipment. Clean these areas regularly to prevent such build up.
Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

Hot water adequate. Observed proper holding temperatures. Cleaning on hard to reach areas of equipment is necessary.
Please get a spill kit and written procedure for cleaning up vomit/fecal accidents in the facility. Also, please have Servsafe/level two food safety certificate available by March 1, 2017.
