Critical Corrected During Inspection Raw shell eggs not maintained at 45° F or below. Observed shell eggs at with an internal temperature at 72.1° F.
Raw shell eggs shall be maintained at a temperature of 45° F or below. Eggs were discarded at the time of inspection.
3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Observed refrigerated chicken not properly date marked.
Refrigerated, RTE, and TCS foods must shall be clearly date marked to indicate the date or day by which the food shall be consumed, sold, or discarded.
3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Observed refridgerated TCS food past date mark inside refridgerater. Food was discarded at the time of inspection.
RTE and TCS food must be discarded if it exceeds the date marked (a maximum of 7 days).

3717-1-02.3(A) / Food contamination prevention - eating, drinking, or using tobacco.
Corrected During Inspection Observed employee purse and other personal items in food prep area. PIC removed the items at the time of observation.
Employee personal items shall be stored away from food and food prep areas to prevent contamination.
3717-1-04.5(B)(5) / Equipment food-contact surfaces and utensils - cleaning frequency.
Utensils and equipment contacting non-TCS foods not cleaned at requried frequency. Observed an accumulation of soil residue inside cappicino machine and above coffee machine. Black mold was also observed beginning to accumulate on lid of ice bin near cash register area, next to coffee machine.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed hand washing sink near grill line prep area with an accumulation of soil.
Increase cleaning frequency to prevent build up of soil residues.

PIC Andy was knowledgeable and certified during the time of inspection. It is recommended that the facility monitor and increase their cleaning frequency. Facility was equipped with thermometers, sanitizer test strips, and gloves.
