[?] A summary of the violations found during the inspection are listed below.

3717-1-04.4(N)(3) / Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness
Critical Corrected During Inspection Observed sanitizer solution in counter bucket to be at 50ppm. Employee remade the sanitizer bucket and was reading at 200ppm. Corrected. Please ensure that sanitizer solution is kept between 200-400ppm to ensure proper sanitiation of food contact items and surfaces.
A quaternary ammonium compound solution shall: (a) have a minimum temperature of seventy-five degrees Fahrenheit (twenty-four degrees Celsius); (b) Have a concentration as specified under paragraph (E) of rule 3717-1-07.1 of the Administrative Code and as indicated by the manufacturer's use directions inculded in the labeling; and (c) Be used only in water with five hundred ppm hardness or less or in water having a hardness no greater than specified by the EPA-refistered label use instructions.

3717-1-02.4(C)(16) / Person in charge: duties - ensure the facility has written procedures for vomiting and diarrheal events.
Person-in-charge did not ensure that the facility has written procedures for employees to follow when responding to vomiting or diarrheal events. Please ensure that a written procedure and spill kit are readily available in the facility to that employes can respond appropriately to vomiuts and/or diarrheal accidents and prevent the spread of foodborne illness.
Person in charge shall ensure that the FSO or RFE have written procedures for employees to follow when responding to vomiting or diarrheal events that involved discharge onto surfaces.
3717-1-04.2(I) / Sanitizing solutions - testing devices.
Observed proper test strips at the facility but all were expired. Please ensure that test strips that are not expired are used to test the concentration of sanitizer solutions to ensure proper sanitation of food contact items and surfaces.
To ensure proper sanitization, a test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided.
