3717-1-02.2 (B) / Hands and arms: cleaning procedure
Critical Employee did not wash their hands for 20 full seconds before beginning to rinse off their hands. All employees must wash their hands for at least 20 seconds before rinsing. Correct immediately.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection Ground in cold holding had an internal temperature from 45-48 degrees Fahrenheit. The meat was voluntarily discarded during inspection. All raw meat must be maintained with an internal temperature of 41 degrees Fahrenheit.

3717-1-04.2(G)(1) / Food temperature measuring devices - availability
Facility did not have stem thermometers capable of taking internal temperatures. Facility must have accurate stem thermometers and use them to check temperatures of time/temperature controlled for safety (TCS) foods regularly. Correct by 02/06/24.

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Boxes of food were on the floor of the walk-in freezer. All non-exempt food must be stored at least six inches off of the ground. Correct by 02/06/24.

3717-1-04.4(Q)(3) / Utensils, temperature and pressure measuring devices - good repair and calibration.
Repeat No working thermometer was present in cooler containing eggs. All coolers containing TCS foods must have a working, accurate temperature-measuring device. Correct by 02/06/24.

3717-1-04(I) / Nonfood-contact surfaces - materials.
Duct tape was on handle of cooler cover. All tape must be removed from equivalent, as the surface of the tape is not smooth, and easily cleanable. Correct by next inspection.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Repeat Gaskets on doors of freezers containing Smith's and Country Maid ice cream were damaged and need to be repaired and replaced to allow an appropriate seal between door and freezer unit. Correct by next standard inspection.

3717-1-05.4(N) / Covering receptacles.
Dumpster lid was open during inspection. All dumpster lids must be maintained closed when not in use to prevent pest harborage. Correct immediately.

3717-1-06.4(A) / Repairing.
Repeat Significant ice accumulation found in walk-in freezer near food prep area. Freezer must have ice removed, and whatever is causing the issue must be corrected. Correct by next standard inspection.
