3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Observed packaged ready to eat saurkraut stored next to raw meat in the meat display case and exposed to potential cross contamination..
To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule. Suggest storin ready to eat foods above raw meats or in separate area to protect from cross contamination that can lead to illness. Correct By: 13-Jan-2016
3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Corrected During Inspection Self serve bevverage machine nozzles, ice shute and food contact surfaces soiled and do not appear to be cleaned daily.
To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch.
3717-1-05.3(C) / Sewage and other liquid waste: Backflow prevention.
Critical Observed a direct connection between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed. The 3 compartment sink in the produce area is being used as a food prep and wash sink but has drain pipe directly connected to waste drains. Sink needs to be air gapped to protect from backflow of sewage into sink if used as a food/ produce wash sink.
To prevent health hazards, a direct connection may not exist between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed unless allowed by the Ohio building code for: a warewashing machine between its waste outlet and a floor drain when the machine is located within five feet (1.5 meters) of a trapped floor drain and the machine outlet is connected to the inlet side of a properly vented floor drain trap; or a warewashing and culinary sink.

3717-1-05.1(S)(2) / Plumbing system - maintained in good repair.
Observed plumbing fixtures with leaks and need repaired. Handwash sink and 3 compartment sink in deli observed leaking. .
A plumbing system shall be properly maintained.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed a build-up of dirt and debris on floor under beverage machine. Hood in deli has build up of debris. Manager noted hood willl be cleaned on the 14th of this month and employees began to clean floor under beverage unit.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.

Cold food sampled observed in proper cold holding at 41F or below. Hot foods sampled observed in proper temperature or cooked to proper temperature. Deli meats observed properly datemarked. Sanitizers in use observed at proper concentrations. Employees observed using gloves and thermometers. Employees appear knowledgeable in general cleaning and sanitizing frequencies of food contact surfaces. Sushi ph measured at 4.2 and met critical limit of HACCP. Management and employees were cooperative making corrections during inspection.
