Critical Employees had the 3 comp sink set up for wash-sanitize-rinse, instead of wash-rinse-sanitize. PIC shall ensure that employees are properly cleaning and sanitizing all equipment and utensils.

Critical There was no employee health policy on file at the time of inspection. Employees must be informed in a verifiable manner of their responsibility to report their symptoms and illnesses as they relate to food borne diseases. Inspector gave facility a copy of an applicable employee health policy to use.
3717-1-02.4(C)(16) / PIC: duties - ensure the facility has written procedures for vomiting and diarrheal events.
Facility did not have a procedure available for how to clean up vomit or diarrheal accidents. Inspector gave facility an applicable procedure to implement.
3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Repeat Observed door seal/gasket on 3 door freezer in kitchen to be broken and peeling. Also observed the edge of the counter by the pop machine to be expanded and molding around it held on by duct tape. The equipment shall be maintained in good repair.
3717-1-04.2(I) / Sanitizing solutions - testing devices.
Sanitizer test strips were expired and water damaged. Facility shall obtain new test strips.
3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Repeat Observed build up of debris on non-food contact surfaces of equipment such as bottoms of reach in cooler and freezer in kitchen, shelves, mixer, door handles on prep table by hot hold line, and counter top by the cappucino machine. Equipment and facilities shall be cleaned as frequently as necessary.
