Upon reinspection, hoods have been cleaned somewhat. Surface surrounding vents still need cleaned. Cooling process: have moved large pans for cooling to freezer designated for chili only, and is monitored periodically during the cooling process. (135-70 in 2 hours; 70-41 in 4 hours.) Still recommend getting shallower pans (4 inches deep) to promote rapid cooling. This increases surface area and cools quicker minimizing potential for growth of microorganisms. |
