Non-durable equipment observed.
Observed several stainless steel pans dented, damaged, and some are not easily cleanable due to dents or damage.
3717-1-05.1(S)(2) / Plumbing system - maintained in good repair.
Observed a few plumbing fixtures leaking water onto floor. Maintain all sinks, drain pipes, and plumbing free of leaks to prevent water damage to floors or to prevent slip hazards in kitchen from water pooling on floor. .
A plumbing system shall be properly maintained.

Overall kitchen food prep areas kept clean at time of inspection. Food sampled observed held cold below 41F or hot above 135F. Sanitizer in use and in proper concentration. Gloves, thermometers, test strips in use. Food held after opening or prep observed with date marks. Operation is currently renovating walkin cooling units #4 and 5 as well as freezer number 1 with approved materials. Continue repairing floors in areas that are damaged. Discussed proper handwashing procedures with management during inspection. Operation has been changed from a Risk Level 3 FSO to a Risk Level 4 FSO and is permitted to cool and reheat food for hot holding.
