[?] A summary of the violations found during the inspection are listed below.

3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Observed food that was not properly protected from contamination by separation, packaging, and segregation. Observed boixes of chicken in walk in cooler not covered. Cover foods in storage with plastic overwrap and close lids to boxes.
To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are dirty. Observed a build up of food debris on non food contact surfaces of equipment, including: walls of microwave, handles of equipment, and floors of reach in coolers/freezers. Clean these areas more frequently to prevent build up.
Nonfood-contact surfaces of equipment shall be kept clean.
3717-1-05.1(S)(2) / Plumbing system - maintained in good repair.
The plumbing system was not properly maintained. Observed air gap in grill area not properly draining. Pipe leading to gap was turned on its side and leaking onto the floor. Repair so the pipe is directly over the flood level rim with a one inch air gap.
A plumbing system shall be properly maintained.
3717-1-06.1(C) / Floor and wall junctures - coved, and enclosed or sealed.
The floor and wall junctures are not properly coved or closed, or floor drains were not provided. Coving in meat room removed from wall. Replace coving to ensure the surface is easily cleanable.
In FSO's or RFE's in which cleaning methods other than water flushing are used for cleaning floors, the floor and wall junctures shall be coved and closed to no larger than one thirty-second inch; where water flush cleaning methods are used, shall be provided with drains and be graded to drain, and the floor and wall junctures shall be coved and sealed.
