[?] A summary of the violations found during the inspection are listed below.

3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed two packages of raw eggs positioned above other food in a reach in cooler. Eggs should be placed so that they are not positioned like this to avoid the possibility of contamination. Also observed raw meat being stored about hotdogs. Raw meats should be moved so that they are underneath food like this.

3717-1-03.3(H) / Reheating for hot holding.
Critical Improper reheating of food for hot holding. Observed two pans of chili holding a temperature of 108 degrees F and 129 degrees F. At 11:30am, per the PIC, these items were put out at 9am. Foods shall be quickly reheated to 165 F within two hours for hot holding. The chili was voluntairly discarded.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Repeat Observed a bag of bologna that was not properly date marked in the reach in cooler. All RTE foods should be properly date marked so that the seven day period is not exceeded.

3717-1-07.1(A) / Poisonous or toxic materials: Storage: separation.
Critical Improper storage of poisonous or toxic materials. Observed a bottle of chlorox directly next to "to go"/carry out containers. Store the cleaner away from food, prep areas and food contact surfaces to prevent possible contamination.

3717-1-02.3(A) / Food contamination prevention - eating, drinking, or using tobacco.
Observed an employee drink outside of a designated area for employee drink/food. Store drinks/food within the designated area to prevent contamination.

3717-1-06.4(L) / Removing dead or trapped birds, insects, rodents, and other pests.
Presence of dead pests or insects. Observed a fly trap hanging over freshly cleaned and sanitized dishes. Spoke with the PIC and told her that the trap should be moved so that the potential for a fly to fall onto the dishes is prevented.

3717-1-03.2(Y) / Miscellaneous sources of contamination.
Observed the ice scoop to the ice machine in the kitchen area stored in a bucket with some dust build up. Store ice scoop so that it remains clean and away from dust/other sources of contamination. Observed a large amount of ice build up in the ice cream freezers near the dining area. Ensure that the lids to the freezers stay closed when not in use to avoid this ice build up and prevent the ice from getting into the food.

3717-1-03.2(K) / In-use utensils - between-use storage.
Repeat In-use utensils improperly stored. Observed ice cream scoops improperly stored when not in use. Ensure that these scoops are either in a container of hot water or other effective method to prevent contamination.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed some dust build up in the vents in the dining room, a fan in the kitchen area and between the shelves where cleaning supplies and ice cream syrups are stored. Also observed some mold build up in the small ice cream freezer's lid in the kitchen area. Clean these areas frequently to prevent dust/mold build up.
