[?] A summary of the violations found during the inspection are listed below.

3717-1-02.2(D) / Hands and arms: where to wash.
Critical Corrected During Inspection Observed 2 sinks on line being used for handwashing and food. Food employees shall clean their hands in hand washing sinks only.
To prevent contamination, food employees shall clean their hands in a handwashing sink or approved automatic handwashing facility and may not clean their hands in a sink used for food prep or warewashing, or in a curbed cleaning facility used for the disposal of mop water and similar liquid waste.

3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Observed dented pans, hole in bus tubs, continental fridge #1 with a broken door seal, CrownTonka #3 light out and door seal bad.- all equipment needs to remain in good repair.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.
3717-1-04.8(A) / Equipment and utensils - air-drying required.
Observed dishes wet nesting holding water not being fully dried before stacking.
After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food and utensils, and may not be cloth dried.
3717-1-04.8(E) / Equipment, utensils, linens, single-service articles, and single-use articles - storage.
Observed trays stored with food contact surface up.- clean equipment shall be stored covered or inverted.
Cleaned equipment and utensils, laundered linens, single-service articles, and single-use articles shall be properly stored as described in this rule.
3717-1-06.1(M) / Outer openings - protected.
Observed threshold gap where light can be seen under door to the dumpsters.
To prevent contamination, outer openings of an FSO or RFE shall be protected against the entry of insects and rodents as specified in this rule.
3717-1-06.2(E) / Handwashing signage.
Observed bathroom where inmates eat with no sign to wash hands.
A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees.
3717-1-06.4(A) / Repairing.
Observed rough floors in several spots throughout the kitchen- Floors needs to be smooth and easily cleanable. Observed CrownTonka #2 door hard to open and close getting stuck.
The physical facilities shall be maintained in good repair.

dishwasher temperature was good. Serv safe ODH certificate needed. They do have 1 available however there are others hanging that do not have the certificate. Recommend getting the certificate to go with those. Labeled containers good throughout facility. PIC knew roughly 6 illnesses which is good. Hair nets, gloves, and washing hands was seen. All temperatures were good.
