3717-1-03.2(I)(1) / Storage or display of food in contact with water or ice - packaged foods
Observed packaged foods stored or displayed directly in contact with ice and/or water. Drips from the condensate during defrost cycle in reach-in freezer may contaminate opened packages of frozen food.
Packaged food may not be stored in direct contact with ice or water if the food is subject to the entry of water because of the nature of its packaging, wrapping, or container or its positioning in the ice or water.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed a build-up of dirt and debris. Facility appeared to have a built up of debris in the hard to reach areas - freezer floor, under and behind equipment.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.
