3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Observed chicken stored above pork. Chicken is to be stored below pork due to the higher cooking tmeperature. Manager moved meats around for proper storage.
To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule.
3717-1-04.5(B) / Equipment food-contact surfaces and utensils - cleaning frequency.
Critical Beverage nozzles and ice chute on customer service pop machine observed with a build up of debris. Clean an dsanitize daily to prevent such build up.
Equipment food-contact surfaces and utensils shall be cleaned at a frequency specified in this rule.
3717-1-06.4(K) / Controlling pests.
Critical Observed plumbing floor drains without proper coverings to prevent access to pests. Cover drains with grates to adequately prevent entry and harborage of pests into the facility.
To prevent illness, the presence of insects, rodents, and other pests shall be controlled by: Routinely inspecting incoming shipments of food and supplies; routinely inspecting the premises for evidence of pests; Using methods, if pests are found, such as trapping devices or pesticides used according section (C), (K) and (L) of rule 3717-1-07.1 of this code; and eliminating harborage conditions.

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Observed several food items in walk in coolers stored under shelving on the floor. Keep food items stored six inches off the floor to prevent from contamination from the premises.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor.
3717-1-03.4(C) / Thawing - temperature and time control.
Observed shrimp thawing in standing water in the prep sink. Ensure cold water is constantly running over thawing food to keep food at proper temperatures.
TCS food shall be thawed as required in this rule.
3717-1-06.4(A) / Repairing.
Observed many brokern coving tiles through out the facility. Repair broken tiles as needed to ensure durable, smooth, easy to clean surfaces and prevent water accumulation and mold growth.
The physical facilities shall be maintained in good repair.
